If the music is in .xa format, you can rip it with PSXMC [PSX Multi Converter]

If it's sequenced, then you can go to radio shack, ask for a "Y-Adapter Audio Cable" and an adapter that can connect Male/Male AV plugs. Plug the Y-adapter into the back of your PC in the hole labeled "line-in". On the other end (of the Cable), plug in the AV adapter, then plug the playstation's AV cable into that.Get a good audio recording tool like Audacity (http://audacity.sourceforge.net/).
Set the rocording volume to 0.1 and the recording quality to 44.1 KHz, 16-bit. Select line-in on the recording pull-down menu, then get to the part you want to record and push record. If you can turn the sound effects off, then do so, this will make life easier. If not, get to a place without any sound effects to record. After you have what you want, click stop, then delete anything from the beginning or end that you want to be not included. If it loops so that it is difficult to place an end, Select the last 10 seconds or so and choose Effects > Fade Out. Make sure your file is 100% finished.
Select File > Export File As Wave. Enter a name and click OK. Then get an MP3 encoder, preferably Lame (http://lame.sourceforge.net/). Encode it at your preferred bit rate (I would reccommend VBR Highest), then delete the old file.
